Salted Caramel Brownies

This is a very delicious recipe for 20 gorgeous fudgy brownies. I decided to make these brownies as part of a present for a friend who's birthday is today [Happy Birthday Lucy!], and they looked really cute when placed in a pretty box with tissue paper!


-Ingredients-
200g unsalted butter, plus extra for greasing
100g dark chocolate
100g milk chocolate
397g can Carnation caramel
1 tsp flaky sea salt
200g golden caster sugar
4 medium eggs
100g plain flour
50g cocoa powder

-Method-
Heat oven to 180C/gas 4.
Grease and line a traybake tin with baking parchment.
Melt the butter in a medium pan and add the chocolate.
Let the chocolate melt off the heat.
In a bowl mix 197g of the caramel with the sea salt until it has loosened up.
Place the rest of the caramel in another bowl with the sugar and eggs, and beat with a whisk until even.
Whisk in the chocolate and butter.
In another bowl combine the flour and cocoa powder, then sift over the chocolate mix.
Beat until smooth.
Pour half the brownie batter into the tin and level it with a spactula.
Then spoon a layer of the salted caramel over this batter.
Spoon the rest of the brownie batter on top and smooth it out - be careful not to move the caramel around too much.
Top with the rest of the caramel in a stripy fashion.
Scatter with a little more sea salt and bake for 30 mins.
Let it cool completely, then cut it into squares.
